About Us

Hospitality Services at Western University is comprised of three business units: Campus Eateries, Conferences and Catering, and Residence Dining. Employing over 600 staff members, we provide services to over 32,000 customers per day in 32 distinct operations on campus.

Responsibilities

Reporting to the Executive Chef, the Executive Sous Chef will support the direction for Great Hall Catering, Residence Dining and Campus Operations including food quality, culinary creativity, menu development, concept development, nutrition and dietary needs, food presentation and departmental sustainability. The Executive Sous Chef is required to meet the needs of a broad, diverse client base while ensuring a high standard of service by providing efficient, professional and personable service to every guest. The Executive Sous Chef will work to meet and exceed the dining experience in campus eateries while overseeing and training staff and fostering relationships with suppliers, while planning and executing the daily menus.

Qualifications

Education:

  • Certified Chef de Cuisine (CCC), or equivalent education
  • Red Seal Endorsement (RSE)
Experience:
  • 5 years of progressive culinary experience in multiple large volume production kitchens (e.g. restaurants, food chains, hotels, cruise ships or tourism)
  • Experience leading multi-cultural teams, preferably in a unionized environment
  • Experience organizing and planning within the hospitality industry is preferred (e.g. budgets, labour costs, food costs, inventory, turnover rate, productivity)
Knowledge, Skills & Abilities:
  • Thorough knowledge of food products, standard recipes, and specific food preparation
  • Ability to lead, train, motivate and evaluate kitchen teams for optimum performance
  • Advanced knowledge of WHMIS and Food Safety, Smart Serve certified
  • Proven experience teaching and training culinary professionals
  • Familiarity with Human Resources principles and practices with the ability to organize and effectively manage human resources needed to achieve results
  • Proven ability and natural inclination to develop relationships by interacting with people in a professional, respectful and diplomatic manner 
  • Ability to foster collaboration and respect among team members and stakeholders
  • Ability to establish effective routines for excellent communication with all members of the team to maximize productivity
  • Ability to quickly re-allocate resources and adjust priorities in response to unexpected events or changing circumstances
  • Ability to effectively drive and manage change initiatives that align with organizational strategies and provide opportunities to increase efficiency
  • Ability to apply creativity, innovation and resourcefulness to programs, projects and daily work
  • Customer service skills with a desire to achieve results in a professional and timely manner
  • Ability to delegate work and provide team members with clear direction and support in meeting their objectives
  • Ability to promote individual growth by encouraging others to learn new skills and develop themselves
  • Ability to provide guidance, support and feedback in a way that is positively received
  • Proven ability to work collaboratively across multiple units 
  • Basic computer skills (MS Office) and ability to work a flexible schedule including evenings and weekends
