Sushi Chef

The Sushi Chef is specifically responsible for the management of the sushi bar including directing and monitoring daily work activities relating to sushi production, as well as ensure high levels of product quality and guest service. This includes:

* Work alongside teammates to prepare and produce food items from the menu, including sushi, hot food items, and side dishes.

* Work closely with the teammates to ensure established standards and product specification is being adhered to (i.e. recipe, ingredients and weights, presentation and display, policies and guidelines).

*Create new  creative and unique sushi rolls and dishes and present the food in Japanese authentic garnishing;

*Additional duties as assigned.

 

Head Kitchen Chef

The Head Kitchen Chef is responsible for supervising the activities of the cooking staff and on a day to day basis. Also must ensure the kitchen is operating at its optimal, safety and production level. This includes:

* Oversee staffing level including hiring, training and developing the right people to match business needs.

* Build and maintain strong customer relationships with store management and third party auditors and third party vendors.

* Participate in month inventory counts, and quality assurance and compliance audits.

* Ensure strict compliance and provide coaching to teammates regarding regulatory requirements such as quality assurance and food safety, health and safety standards, and inventory levels, and ensuring all required corrective action is taken promptly.

* Additional duties as assigned.
